What is the 'Bloom'?

Egg shells are covered with a natural coating that seals its pores. The bloom is magical in that it is an invisible layer that helps to prevent bacteria from getting inside the shell and reduces moisture loss. Wiping or washing eggs removes the protective coating and reduces the lifetime of the egg. So, keep the bloom on there, your eggs will stay fresh longer. 

What about those dirty eggs? The ones that have manure on them, the one that got laid in the dirt or was next to an egg that was broken in the nesting box?  What about those?? 

Store dirty eggs in a separate carton until ready to use - then wash and and enjoy.
