Fresh eggs are difficult to peel and there is only one way around it that I know of:
Hard boil them as you normally would. When rinsing and cooling down with cold water add two tablespoons of vinegar to the water. Allow to sit for a few minutes, rinse in cool water again and peel. The shells should slip right off.
Alternatively, the best eggs to use for peeling are more than a week old.
