Orange Cream Pie - 6 Eggs

A cool pie for hot Summer months!     orange-creme-pie..jpg

What you'll need:


Pastry Crust

 1 1/2 cups all-purpose flour

pinch of salt

4 1/2 tablespoons butter

iced water

 

Filling

 2 cups sugar

3/4 cup all purpose flour

pinch of sea salt

2 1/2 cups hot water

6 egg yolks, beaten

1/3 cup butter

1/2 cup orange juice

2 teaspoons grated orange rind

1 tablespoon grated lemon rind


Sift together the flour and salt in mixing bowl.
Cut in butter until mixture resembles fine bread crumbs.
Add just enough iced water to forma firm dough. Chill for 30 minutes.
Roll out the dough and line a pie pan. Pierce bottom with fork several times to prevent bubbling of crust.
Bake in a 400 degree oven for approximately 15 minutes. Cool.

Mix together sugar, flour and salt in sauce pan.
Add water and continue stirring.
Slowly add egg yolks, stirring constantly until mixture thickens.
Reduce heat, cover and cook for 10 minutes.
Stir in butter, orange juice, orange and lemon rinds.
Pour into cooled pie shell and chill until firm.
Garnish with whipped cream
